Korean chef Hawan Jung, who has an immense background of working in the best European and American restaurants, is revamping the menu of the luxury Asian restaurant Sintoho at Four Seasons #hotel Lion Palace St. Petersburg. He is a perfectionist who creates beauty with no frills based on his own philosophy. The cornerstone of his approach is the terroir. The #chef has no doubt that the deep understanding of people, climate and soil of the region, where a #restaurant is situated, helps him create indigenous dishes that are pure, elegant and piquant.

Hawan Jung was born in Korea but got his drive for perfection and passion to mix different culinary traditions in the best restaurants of the world. His career path has been initially lit by Michelin stars. He did a traineeship in the legendary Eleven Madison Park #restaurant (New York, 3 Michelin Stars, #4 The World’s 50 Best Restaurants 2018), Coi and Atelier Crenn restaurants (San Francisco, both with 2 Michelin stars), Mina #restaurant in Bilbao (1 Michelin star), he also worked in the cult Spanish #restaurant Mugaritz (#3 The World’s 50 Best Restaurants 2018). Last few years he has been running the kitchen and creating the menu in La Vie #restaurant (Osnabrück, Germany) under the guidance of the Master #chef Thomas Bühner. In the classic setting of this #restaurant, guests can enjoy avant-garde dishes with genuine and intense aromas. This is a completely unique experience because the dishes affect all five human senses.

“Growing up I ate homemade Korean #food that my mom cooked. Then, I studied and gained experience in the contemporary restaurants. Through the years I came up with my own formula of individual style: 90 percent traditions and 10 percent surprise. Traditions are very important but they should be maintained by giving them a new life and not by sticking to nostalgic feelings. There should always be a place for a surprise on a plate,” shares #hawanjung.
